In many states of North India, making Pua on Holi is considered auspicious. This recipe, passed down from grandmothers' times, requires neither many ingredients nor much time, but the taste is so delicious that everyone will be left licking their fingers.
The special thing is that this recipe is made in a completely Indian style, with a perfect combination of fennel, cardamom, and the sweetness of jaggery or sugar. If you want to enjoy the traditional flavors this Holi, be sure to try this easy and classic Pua recipe.
Ingredients for Making Pua
1 cup wheat flour
1/2 cup semolina (optional, for crispiness)
3/4 cup jaggery (or 1/2 cup sugar)
1 cup milk
2-3 small cardamom powder
1 teaspoon fennel seeds
1-2 teaspoons grated coconut (optional)
Ghee or oil for frying
Method
To make grandma-style Pua for the special occasion of Holi, first take lukewarm milk in a vessel and dissolve the jaggery thoroughly in it. Make sure the jaggery is completely dissolved and free of lumps. Now add wheat flour (or refined flour) and a little semolina to it. Whisk the mixture well to prevent lumps.

The batter should be neither too thin nor too thick—its consistency should be like that of a pakora batter. Now add the fennel seeds and cardamom powder. If desired, you can also add some grated coconut to enhance the flavor.
