**How to Make Pure Jaggery at Home**
The most important ingredient for making jaggery at home is fresh sugarcane juice. If you can source fresh juice from a sugarcane vendor or a mill, you can easily prepare pure jaggery.
Next, strain the sugarcane juice through a clean cloth or a fine sieve to remove any dirt, grass, or other impurities.
Then, pour the strained juice into a heavy-bottomed vessel and start cooking it over a low flame. As the juice heats up, foam will begin to form on the surface. Since this foam consists of impurities, skim it off periodically using a spoon; this ensures the jaggery remains clean and of high quality.
Continue cooking the juice, stirring it occasionally. After some time, the juice will begin to thicken and turn a golden-brown color. Once the mixture has thickened sufficiently and reached a jaggery-like consistency, turn off the heat.
Now, pour the prepared mixture into a tray, plate, or mold greased with ghee. Allow it to cool; it will harden as it cools down. You can then cut it into small or large pieces according to your preference.
