This South Indian dish is packed with the tang of lemon, the pungency of spices, and the aroma of curry leaves, which both warms you up in the cold and enhances your taste.

Ingredients (serves 2-3):
Cooked rice – 2 cups (cold rice is best)
Lemon juice – 2 tablespoons
Oil – 2 tablespoons
Mustard seeds – 1 teaspoon
Urad dal – 1 teaspoon
Chana dal – 1 teaspoon
Curry leaves – 8-10
Dried red chilies – 1-2
Green chilies – 1-2 (finely chopped)
Ginger – 1/2 teaspoon (grated)
Peanuts – 2 tablespoons (fried)
Turmeric powder – 1/2 teaspoon
Asafoetida – a pinch
Salt – to taste
Coriander leaves – for garnishing

Method:
Prepare the tempering
Heat oil in a pan. Add mustard seeds. When they crackle, add the urad dal, chana dal, and peanuts. Fry until golden brown.
Mix the spices
Now add asafoetida, dried red chilies, green chilies, ginger, and curry leaves. Stir for a few seconds.
Add the rice
Add the turmeric and immediately add the rice to prevent it from burning. Add salt and mix well.
Add the lemon juice
Turn off the heat and then add the lemon juice. Mix well.
Garnish and serve
Garnish with coriander leaves and serve hot with papad, pickle, or yogurt.
