Puri Recipe
For this thali, you'll need to prepare puris. To make puris, mix salt with flour and knead a stiff dough, adding water little by little. Cover and let it rest for 10-15 minutes. Roll out the dough into small balls and roll them into puris. Fry in hot oil until golden brown on both sides.
Potato-Tomato Curry
Keep in mind that this curry will be made without onion and garlic. To prepare it, first heat the oil and temper with cumin seeds. Then, add tomatoes and chilies and cook until the spices begin to separate. Mash the potatoes, add salt, garam masala, and a little chaat masala, and mix well. Add a little water and cook on low heat for 5 minutes. Finally, sprinkle with coriander leaves and turn off the heat.
Pumpkin Curry
Prepare the sweet and sour pumpkin for your vegetarian thali. First, heat oil in a pan and temper with cumin seeds. Then, add pumpkin, turmeric, coriander powder, and salt. To make Makhana Kheer, first lightly fry the Makhana in ghee and crush it lightly after it cools. Now, boil milk in a heavy pot and add the Makhana. Cook it on low heat for 15-20 minutes. Add sugar and cardamom. The Kheer is ready.
