Children love to eat ice cream in the summer season. But if you do not want to feed the children outside ice cream, then you can make tasty almond-pistachio kulfi for them at home. Making almond-pistachio kulfi is very easy and children will also like its taste.
For how many people: 2

Ingredients:
1 liter full cream milk
1/2 cup condensed milk
1/4 cup khoya (mawa), grated
1/4 cup almonds, coarsely ground
1/4 cup pistachios, coarsely ground
1/4 teaspoon cardamom powder
A pinch of saffron threads (soak in a little hot milk)
2 tablespoons sugar (according to taste)
Method:
Put milk in a heavy bottom vessel and heat it.
When the milk starts boiling, reduce the flame and cook the milk by stirring continuously till it reduces to half. Keep scraping the cream that forms on the sides and keep mixing it in the milk.
Now add condensed milk and sugar and mix well and cook for 2-3 minutes.
Now add soaked saffron milk and cardamom powder and mix.
Add grated khoya and mix well and cook for 1-2 minutes.
Now add coarsely ground almonds and pistachios mix and turn off the flame.
Let the mixture cool completely.

After cooling, fill the mixture in kulfi moulds. If there are no molds, you can also use small cups or glasses.
Cover the moulds with aluminium foil or lid and freeze in the freezer for 6-8 hours or overnight.
To demold the kulfi, dip the mould in lukewarm water for a few seconds and then gently take out the kulfi.
Garnish with chopped pistachios and almonds and serve chilled.
