Ingredients

Rice - 2 cups
Spinach - 2 cups
Garlic - 1 teaspoon
Ginger
Onion - 1 (finely chopped)
Tomato - 1 (finely chopped)
Curry leaves
Potato - 1 (boiled mashed)
Garam masala - a little
Salt - according to taste
Mustard - a little
Urad and Chana dal - 2 teaspoons
Green and red chilies - chopped long

Method

- First of all wash the rice and soak it for about 30 minutes and finely chop the spinach.

- Now boil 4 cups of water in a vessel. Add rice and salt to it and cook on high flame for 5-7 minutes.

- When the water dries up, reduce the flame. Now heat oil in a pan, add mustard, urad, and chana dal, red and green chilies and fry well.

- Now add onion, salt, tomato and spinach, cover and cook for 7-8 minutes.

- Add garam masala and cook for 2-3 minutes. Mix the cooked rice well.

- Now heat oil in another pan, add mashed potato and curry leaves and fry for 3-4 minutes.

- Add the potato mixture to the rice and mix. Garnish the spinach rice with green coriander.
