 Ingredients

Muttha (sour curd) – 1/2 kg

Boiled potatoes – 6 to 7 (lightly mash into small pieces)

Cumin seeds – 1/4 tsp

Salt – according to taste

Ginger – a pinch (grated)

Green chilies – 2 to 4 (finely chopped)

Coriander leaves – 1 tsp (finely chopped)

Ghee/mustard oil – 2 tsp

Asafoetida – a pinch

Red chili powder – 1/4 tsp

Turmeric powder – 1/4 tsp

Coriander powder – 1/4 tsp

The method of preparation is as follows.

First of all, prepare the potatoes.

Peel the boiled potatoes and mash them lightly with your hands. Do not make a paste, keep it a little coarse.

Fry the spices

Heat mustard oil or ghee in a pan. Add cumin seeds and let them crackle. Now add asafoetida, ginger, turmeric, red chilli and green chilli and fry for a few seconds.

Add potatoes and buttermilk.

Now add mashed potatoes and mix well with the spices. Now add buttermilk slowly and keep stirring, keep the flame of the gas very low and keep stirring continuously so that the buttermilk does not curdle. Keep stirring it till it boils. As soon as it boils, add one more cup of hot water and let it cook on medium flame for 10-12 minutes. During this time, both its taste and thickness increase. Now add salt according to taste and let it boil lightly. Do not cook for too long, otherwise the vegetable will become very thick.

Serve

Turn off the gas and add green coriander on top. Both its aroma and taste are very special. Serve it with hot roti, paratha or rice.
