Ingredients for making Tutti Frutti:

Watermelon peel (white part, without green peel) - 2 cups
Sugar - 1 cup
Water - 2 cups
Edible colors (red, yellow, green) - 2-3 drops
Cardamom powder - 1/4 teaspoon
Kewda or rose water - 2-3 drops

Method of making:

1. Prepare the peel:
First of all, peel the green outer part of the watermelon peel, and cut the white part inside into small pieces.

2. Boil:
Put these pieces in water and boil for 8–10 minutes till they become slightly soft. After that, strain it.

3. Make sugar syrup:
After the peels are boiled, make syrup by adding 1 cup of sugar and 2 cups of water in a pan. It should not be made too thin, make one-string syrup.

4. Add peel:
After the syrup is made, add boiled pieces of watermelon to the syrup, and cook on low flame for 15–20 minutes so that they become sweet and transparent.

5. Add color:
After this, to bring color to them, divide them into 3 parts and add 2–3 drops of different color to each part. And mix them well. If you want, you can also add some rose water or cardamom powder for flavor.

6. Dry:
Spoon out the colored pieces of the peel and spread them on a tray or plate and dry them under a fan or in the sun for 6–8 hours. Or you can also dry them in the oven at 100°C for 20 minutes.
