Kashmiri cuisine is renowned for its distinct aroma, spices, and traditional flavors. From the famous *Wazwan* to *Kahwa*, everything here carries a unique identity. Among the offerings found in the streets of Kashmir is a snack that is highly favored by both locals and tourists alike—*Nadru Monje*. Prepared from *Nadru* (lotus stem), this crunchy delicacy is crispy on the outside and tender on the inside. It is typically enjoyed as a snack with tea, either in the morning or in the evening. The best part is that it can easily be prepared at home.

What is *Nadru Monje*?
*Nadru Monje* is a popular Kashmiri street food. In the Kashmiri language, *Nadru* refers to the lotus stem, while *Monje* denotes this type of fritter. To prepare it, the lotus stem is sliced, coated in a spiced gram flour (*besan*) batter, and deep-fried in hot oil. Its taste differs slightly from regular fritters, as the lotus stem retains its unique texture and a subtle, crisp quality.
Ingredients for *Nadru Monje*
250 grams lotus stem (*Nadru*)
1/2 cup gram flour (*besan*)
2 tablespoons rice flour
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon carom seeds (*ajwain*)
A pinch of asafoetida (*hing*)
Salt to taste
Water as needed
Oil for frying
How to make *Nadru Monje* at home
Step 1: Begin by washing the lotus stem thoroughly. Since dirt or soil can accumulate inside, it is essential to clean it well. Peel the lotus stem and cut it into thin, long strips. Alternatively, you can also slice it into round pieces.
Step 2: Rinse the chopped pieces once more with water and drain them thoroughly. In a mixing bowl, combine gram flour (besan), rice flour, red chili powder, turmeric, carom seeds (ajwain), asafoetida (hing), and salt. Gradually add water to create a thick batter—ensure it is neither too thin nor too thick.
Step 3: Add the lotus stem pieces to the batter and mix well, ensuring they are evenly coated with the spiced gram flour mixture.
Step 4: Heat oil in a deep pan (kadhai). Once the oil is hot, carefully add the lotus stem pieces. Fry them over medium heat until they turn golden brown and crispy. Avoid overcrowding the pan, as the pieces may stick together.
Step 5: Remove the prepared 'Nadru Monje' and place them on a paper towel to absorb any excess oil. Serve them hot with green chutney or a chutney of your choice.
Tips to Enhance the Flavor:
To make the 'Nadru Monje' extra crispy, be sure to add some rice flour along with the gram flour. Dry the lotus stem pieces thoroughly before coating them in the batter so that the mixture adheres well. Always fry them over medium heat; this ensures the outer layer becomes crispy while the inside cooks perfectly. In this way, you can enjoy this special snack—a delicacy often found in the streets of Kashmir—right at home.
