Benefits of Making Maggi Masala at Home
Store-bought Maggi masala packets or ready-made spice mixes often contain various preservatives and artificial flavors, which are not considered ideal for health. In contrast, when you make it at home, it is prepared using completely pure, fresh, and hygienic spices. The best part is that this masala can elevate the taste of not only Maggi but also pasta, noodles, Maggi Manchurian, soups, and dry vegetable dishes. Ingredients:
(You will need the following ingredients for 4 servings:)
3 tbsp onion powder
3 tbsp garlic powder
2½ tbsp cornflour
10 tbsp powdered sugar
2 tbsp dry mango powder (amchur)
1½ tsp dry ginger powder (sonth)
3 tbsp chili flakes
1 tbsp turmeric powder
2 tbsp cumin seeds
3 tbsp black peppercorns
1 tbsp fenugreek seeds
3-4 whole red chilies
2 tbsp whole coriander seeds
2 bay leaves
Salt to taste
Other requirements: A pan, mixer-grinder, sieve

Preparation Method (Step-by-Step):
Remove moisture from the spices
First, place the cumin seeds, fenugreek seeds, bay leaves, coriander seeds, whole red chilies, and black peppercorns in the sun for 2 hours to ensure all moisture is completely removed.

Roast the whole spices.
After the allotted time, place a pan on the stove over medium heat. Once the pan is hot, add the sun-dried whole spices and roast them on low heat for 4-5 minutes.

Cool and grind
Transfer the roasted spices to a plate and let them cool down completely. Once cooled, place the whole spices into a mixer jar and grind them into a fine powder.

Mix in the powders and other ingredients.
Now, add the onion powder, garlic powder, cornflour, dry mango powder, powdered sugar, dry ginger powder, turmeric, chili flakes, and salt to the ground spice mixture. Blend everything in the mixer until fine. If using a mixer, do not run it continuously for more than 25 seconds.

Sieve and store
Sieve the prepared mixture thoroughly using a fine-mesh sieve to ensure there are no coarse lumps left. Your pure and delicious homemade Maggi masala is now ready. Whenever you make *jave* or Maggi at home, use this homemade Maggi masala to enhance the flavor manifold.
