Ingredients:
1/4 cup gram flour (besan)
1 cup rice flour
1/4 tsp baking soda
1 tbsp cornflour or arrowroot powder (for crispiness)
1 tbsp oil (for shortening/binding)
1 tsp red chili powder
1 tsp chaat masala
1/2 tsp dry mango powder (amchur)
1/2 tsp roasted cumin powder
Salt and black salt to taste
Oil for frying

Preparation Method
Prepare the mixture: First, place a pan on the stove with 1 cup of water, a little salt, and 1 tablespoon of oil, and bring it to a boil. Once the water boils, reduce the heat to low and add the rice flour, gram flour, and cornflour. Mix everything well, cover the pan, and let it steam-cook for 2 minutes.
Knead the dough: Transfer the mixture to a bowl and let it cool down slightly. While it is still warm, apply a little oil to your hands and knead the mixture thoroughly until it becomes a smooth, soft dough. Shape the Kurkure: Pinch off small portions of the prepared dough. Using your hands or fingers, shape them into long, irregular, and twisted forms—just like the store-bought Kurkure.
Fry the Kurkure: Heat oil in a deep pan (kadhai) over medium heat. Add the shaped Kurkure to the oil and fry over low-to-medium heat until they turn golden and crispy.
Prepare the tangy spice mix: While the Kurkure are frying, prepare a special spice blend in a small bowl by mixing red chili powder, chaat masala, dry mango powder (amchur), cumin powder, and black salt.
Remove the fried Kurkure from the pan and transfer them immediately to a bowl. Sprinkle the prepared spice mix over them and toss well to ensure the spices coat the Kurkure evenly.
