Even Litti-Chokha pales in comparison to this Bihari tomato chokha; the recipe is simple..

In Bihar, it is not just *litti-chokha* that is popular; *tamatar ka chokha* (spicy mashed tomato dish) is also enjoyed with great relish. The best part about this rustic *chokha* is that it can be prepared to be incredibly flavorful using only a few simple ingredients and minimal spices.

If you are looking to add a twist to your meal—moving beyond the usual vegetables and lentils—Bihari-style *tamatar chokha* is a delicious and easy-to-make option. Let’s look at the recipe:

Ingredients:
1 tbsp mustard oil

4–5 finely chopped *desi* (local/heirloom) tomatoes

3–4 dried red chilies

7–8 garlic cloves

2 medium-sized onions

2 tbsp finely chopped fresh coriander leaves

1 tsp cumin seeds

2 chopped green chilies

1/4 tsp red chili powder

Juice of 1/2 a lemon

Salt to taste

Method:
To prepare the *tamatar chokha*, start by washing the 4–5 *desi* tomatoes and cutting them into large pieces. Using tart or tangy tomatoes will make the *chokha* even more delicious.

Place a pan on the stove and add 1 tablespoon of mustard oil.

Once the oil is hot, roast the 3–4 dried red chilies in it. Ensure they are roasted well for about a minute.

Next, add the finely chopped garlic cloves to the oil and sauté until they turn golden brown.

Add the cumin seeds to the same oil and let them roast.

In the next step, add the 2 medium-sized, finely chopped onions and fry them until they turn golden brown.

Add the 4–5 chopped *desi* tomatoes to the pan. Cover it and let it cook over a low flame for a while.

Once the tomatoes are thoroughly cooked, remove them from the pan and set them aside on a plate.

Finally, mix the roasted garlic and dried red chilies into the cooked tomatoes. Now, mash everything together using a masher or a spoon until it reaches a mashed consistency (bharta).

During this process, add 1/4 teaspoon of red chili powder and salt to taste.

Once everything is well combined, add 2 tablespoons of finely chopped fresh coriander leaves.

Finally, squeeze in the juice of half a lemon to add a touch of tanginess.

Your Bihari-style tangy tomato chokha is now ready; serve it with roti or rice.
