Traditional Bihar Foods: Bihar is in the news these days, as the elections in Bihar have recently concluded. Whenever Bihar is mentioned, the first thing that comes to mind is its delicious food. The first dish that comes to mind is Litti-Chokha. This dish is extremely popular not only in Bihar but also in the country and abroad. Chana Ghugni
Ingredients for Making Chana Ghugni
Black chickpeas – 1 cup
Onion – 1
Tomato – 1
Ginger-garlic paste – 1 teaspoon
Turmeric – 1/2 teaspoon
Red chili peppers – 1 teaspoon
Coriander powder – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Salt – to taste
Green chilies
Coriander leaves
Method
To make chana ghugni, first boil the soaked chickpeas in a pressure cooker with salt and turmeric. Once the chickpeas are boiled, heat oil in a pan and temper with cumin seeds. Next, fry the onion in the pan and add the ginger-garlic paste. Add the tomatoes and spices and fry thoroughly. After the tomatoes are fried, add the boiled chickpeas and cook for 5-7 minutes. Finally, serve with green chilies and coriander leaves.
Dal Fara

Ingredients for making Dal Fara
Rice flour – 2 cups
Chana dal – 1 cup (soaked and ground)
Garlic – 4-5 cloves
Ginger – a little
Green chilies – 2
Cumin – 1/2 teaspoon
Salt – to taste
Coriander leaves
Method
To make Dal Fara, first add warm water to the rice flour and knead a stiff dough. Once kneaded, set it aside. Meanwhile, coarsely grind the chana dal with garlic, ginger, green chilies, salt, and cumin. After grinding, form small balls of rice flour, flatten them, and fill the center with the dal mixture. Seal the edges and form them into oblong shapes. Next, bring water to a boil in a large pot, add the filled faras, and cook for 10-12 minutes. Finally, remove and season with a little oil if desired. Serve with chutney.
Sattu Paratha

Ingredients for Making Sattu Paratha
Wheat flour – 2 cups
Sattu – 1 cup
Green chili – 1 finely chopped
Garlic (grated) – 3-4 cloves
Pickling masala – 1 teaspoon
Onion – 1 finely chopped
Lemon juice – 1 teaspoon
Celery – 1/2 teaspoon
Salt – to taste

Method
To make Sattu Paratha, first knead the wheat flour with water until soft. Prepare the filling by mixing Sattu, onion, garlic, green chili, lemon juice, salt, celery, and pickle masala in a bowl. Form the dough into balls and fill them with Sattu masala. Now, gently roll the paratha and fry it on a pan with ghee/oil. Serve hot with yogurt or pickle.
