Ingredients

1 kg ripe tomatoes

3/4 kg jaggery

1 pinch salt

2 tablespoons lemon juice

2 sticks of cinnamon powder

6 cloves

Method

- First of all, wash the tomatoes and cut them in half. Boil the water well, turn off the gas, and add the tomatoes to the hot water.

- Let it sit for 5-10 minutes. This will help the tomatoes peel off easily. Remove them from the water, and let them cool. Peel the skin. Squeeze out the juice and seeds.

- Chop the tomatoes into very fine pieces or blend them in a processor for a few seconds. Take a large pan, add the tomatoes to it. Boil for 15 minutes on medium-high flame to thicken.

- Add jaggery, cinnamon, and clove powder. Mix well and reduce the flame to medium. Bring the mixture to a full boil, stirring occasionally.

- As soon as it thickens, keep stirring it continuously and reduce the flame. When the jam becomes like a thick sauce, add lemon juice.

- Turn off the gas and cool for about 10 minutes and pour into clean glass bottles. Once it cools completely, close the lid and store it in the refrigerator in a cool dry place.
