These pakoras are crispy on the outside and soft on the inside, and they are very easy to make. The best part is that these pakoras, made with semolina and yogurt, are light on the stomach and keep you feeling fresh for a long time. Mixed Vegetable Semolina Pakoras
Ingredients
Semolina (Sooji/Rava) – 1 cup
Yogurt – ½ cup
Finely chopped vegetables (carrots, bell peppers, onions, cabbage, green chilies) – 1 cup
Ginger paste – 1 teaspoon
Salt – to taste
Cumin seeds – ½ teaspoon
Baking soda – 1 pinch
Fresh coriander leaves – 2 tablespoons
Water – as needed
Oil – for frying
Instructions
In a mixing bowl, combine semolina, yogurt, and a little water to make a thick batter. Cover and let it rest for 10 minutes so the semolina swells. Then add all the vegetables, ginger paste, salt, cumin seeds, fresh coriander leaves, and baking soda. Heat oil in a pan and drop small portions of the mixture using a spoon to fry the pakoras. Fry until golden brown and crispy on both sides. Serve hot with tomato sauce or green chutney. Cheesy Semolina Fritters

Semolina – 1 cup
Yogurt – ½ cup
Grated cheese – ½ cup
Green chilies – 1, finely chopped
Coriander leaves – 1 teaspoon
Salt – to taste
Baking soda – 1 pinch
Water – as needed
Oil – for frying
Instructions
Make a thick batter by mixing semolina and yogurt and let it rest for 10 minutes, covered. Then add cheese, green chilies, coriander leaves, salt, and baking soda. Mix well and fry in the shape of fritters. Once golden brown on both sides, serve with chutney. This cheesy version will be especially loved by both adults and children.
