Matar Kulcha is a famous street food from Delhi. You'll find Matar Kulcha stalls everywhere, emanating the tempting aroma of spicy peas. While the Matar Kulcha sold in the market is quite delicious, there are often concerns about its hygiene.

Recipe for Spicy Peas
Dried white peas are used to make the peas.
Ingredients:
White peas - 1 cup (soaked overnight)
Finely chopped onion - 1 medium
Finely chopped tomato - 1 medium
Green chilies - 2-3 (finely chopped)
Ginger - 1-inch piece (grated)
Tamarind water - 3-4 tablespoons
Spices - Salt (to taste), Red chili powder (1/2 teaspoon), Roasted cumin powder (1 teaspoon), Chaat masala (1 teaspoon), Black salt (1/2 teaspoon)
Fresh coriander - finely chopped
Instructions:
First, put the soaked peas in a pressure cooker. Then add 2 cups of water and a little salt and boil until 3-4 whistles. Make sure the peas are cooked but not completely mashed.
Now transfer the boiled peas to a large bowl and add the chopped onion, tomato, green chilies, and ginger.
After that, add tamarind water, roasted cumin powder, chaat masala, red chili powder, and black salt, and mix well.
Finally, garnish with plenty of fresh coriander and a little lemon juice. Your spicy peas are ready!
Recipe for Soft Kulchas
Ingredients:
All-purpose flour - 2 cups
Yogurt - 1/4 cup
Baking powder - 1/2 teaspoon
Sugar - 1 teaspoon
Oil/Butter - for cooking
Nigella seeds and coriander leaves - for topping
Instructions:
First, mix the all-purpose flour with yogurt, sugar, baking powder, and a little salt. Knead a soft dough using lukewarm water. Apply a little oil on top, cover and leave it for 1-2 hours.
After 1-2 hours, make small balls from the dough. Roll them out slightly thick and press some nigella seeds and fresh coriander leaves on top.
Then, heat a griddle over medium heat, place the kulcha on the griddle, sprinkle a little water around the edges, and let it cook.
Cook until golden brown on both sides and finally, apply butter and serve hot.
For a market-like taste, add finely chopped onions on top of the peas when serving.
