Baingan Bharta is a very popular dish in Indian cuisine, but the Punjabi-style version is renowned for its distinctive smoky aroma and spicy taste. It is typically served with tandoori roti, parathas, or piping-hot phulkas. The combination of the smoky aroma and traditional spices sets it apart from ordinary vegetable dishes. **Ingredients Required**
1 large eggplant (brinjal)
2 medium-sized onions, finely chopped
2 tomatoes, finely chopped
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
½ teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
½ teaspoon garam masala
2 tablespoons mustard oil or refined oil
Salt to taste
Fresh coriander leaves for garnishing
**Method for Roasting the Eggplant**
First, wash the eggplant thoroughly. Rub a little oil over it and make a few small incisions with a knife. Now, roast the eggplant over a low flame, turning it frequently to ensure it cooks evenly on all sides. Once the skin turns black and the flesh inside becomes soft, set it aside to cool.
**Method for Preparing the Bharta**
Heat oil in a pan (kadhai). Add the finely chopped onions and sauté until golden brown. Next, add the ginger-garlic paste and cook for a few seconds.
Then, add the green chilies and chopped tomatoes. Sauté until the tomatoes soften. Now, add the turmeric powder, red chili powder, coriander powder, and salt. Cook the spices until the oil begins to separate.
Add the mashed roasted eggplant to the pan and mix well with the spices. Cook over medium heat for about 5 to 7 minutes. Finally, add the garam masala and mix thoroughly.
**Tips to Enhance the Flavor**
Roasting the eggplant directly over an open flame imparts the authentic smoky flavor.
You can further enhance the taste by adding a little butter or *desi ghee* (clarified butter). Some people also add green peas to it, which makes the bharta taste even better.
Garnish with fresh green coriander before serving.
