Cauliflower
Peas – ½ cup (green peas)
Carrot – ½ cup (chopped)
Tomato – 1 (finely chopped)
Green chili – 2 (chopped)
Turmeric – ½ teaspoon
Coriander powder – 1 teaspoon
Red chili powder – ½ teaspoon
Garam masala – ½ teaspoon
Salt – according to taste
Desi ghee and oil – 2 teaspoons
Water – 2 cups

Method
To make Tehari, first of all, soak the rice in water for half an hour. This will make it more fluffy. Now, when the rice is soaked, prepare the vegetables. For this, wash potatoes, cauliflower, carrots, and tomatoes thoroughly and cut them into equal parts. After this, heat oil/ghee in a heavy-bottom pan or cooker.

When the oil is hot, add the onion and fry it till it turns golden, then add the green chillies. Add tomatoes, then add turmeric, chilli powder, coriander powder, and salt. Cook for 2-3 minutes.
When tomatoes are cooked, add chopped potatoes, carrots, cauliflower, and peas. Fry for 5-7 minutes. After frying the vegetables well, add soaked rice and mix it gently with the vegetables.
