Sabudana Cutlets Recipe: Sabudana is one of those easy-to-eat dishes, whether fasting or on a normal day. People typically make khichdi, vada, or papad from it, but these days, sabudana cutlets are trending rapidly on social media.

The special thing is that these cutlets are ready in just 15 minutes and are so mild in taste that everyone, children and adults alike, instantly enjoys them. They require neither excessive spices nor lengthy preparation. Simply mixing soaked sabudana, boiled potatoes, and some basic spices creates a crispy and tasty snack in no time.
These cutlets can be eaten even during fasting days, as the recipe is completely fast-friendly. If you're looking for a healthy and crunchy snack in a short time, sabudana cutlets are the perfect option.
Ingredients
1 cup soaked sago
2 boiled potatoes
2 teaspoons peanut powder
Finely chopped green chilies
Black pepper
Rock salt
Green coriander
Ghee or oil for frying
Method
To make sago cutlets, first squeeze the water from the soaked sago and place it in a large bowl to prevent the mixture from becoming loose while forming the cutlets. Now, mash the boiled potatoes thoroughly and mix them with the sago so that both ingredients are easily combined. Then, add roasted and ground peanuts, finely chopped green chilies, black pepper powder, rock salt, and fresh coriander leaves, and mix well.

Make small round or tikki-shaped cutlets from the prepared mixture. Heat some ghee or oil in a pan and fry the cutlets on a low flame until golden and crispy on both sides. If you prefer extra crispiness, you can also deep-fry them. Serve the prepared sago cutlet hot with curd-mint dip, green chutney or vegetarian curd.
