Ingredients to make Pudina Rice
1 cup basmati rice
1 bunch fresh mint
Half a bunch of coriander
1-2 green chillies (you can increase or decrease according to your taste)
1 inch piece of ginger
4-5 garlic cloves
1 large onion (finely chopped)
1 tomato (finely chopped)
1/2 teaspoon cumin seeds
1 bay leaf
2 cloves
1 small cardamom
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste
2 teaspoons oil or ghee
Method to make Pudina Rice
First of all, wash the rice and soak it for 15-20 minutes.
Now, put mint, coriander, green chillies, ginger, and garlic in a mixer jar and add some water to make a thick paste.
Heat oil/ghee in a pressure cooker or deep pan. Add cumin seeds, bay leaves, cloves, and cardamom, and fry them.
Now add chopped onion and fry it till it turns golden.
After this, add chopped tomatoes and cook till soft.
Now add prepared mint-coriander paste and fry for 2-3 minutes so that its rawness goes away.
Add turmeric powder, garam masala, and salt, and mix well.
Now add the soaked rice and mix it slowly with the spices.

Add 1.5 to 2 cups of water as per the rice, close the lid and cook till one whistle.
Let the cooker cool down on its own. Open the lid and mix the mint rice gently.
Serve hot mint rice with raita, papad or your favorite vegetable.
