Ingredients

1 cup parboiled rice

1/4 cup urad dal

3 tbsp toor dal

3 tbsp semolina

1 tsp fenugreek seeds

Salt to taste

For making masala

250 gms potatoes

1 cup chopped onion

1 tsp chopped garlic

1 tsp chopped ginger

2 tbsp chopped coriander leaves

Salt to taste

Oil

1 tsp mustard seeds

A sprig of curry leaves

For making red chutney

5-6 garlic cloves

A pinch of ginger

2 whole red chillies

1 tbsp fried chana dal

Salt to taste

Method

- Soak all the ingredients except semolina for 4 hours. Then add semolina, salt, and water to it. Make the batter and keep it aside. Let it ferment overnight.

- On the other hand, boil the potatoes and mash them. Grind ginger, garlic, coriander leaves, green chillies, and onion and make a paste.

- Heat oil in a pan and add mustard seeds to it. Add onion and fry it. Add paste to it and fry it for some time. Add tomatoes, potatoes, salt and curry leaves to it.

- To make red chutney, roast gram lentils till they become light brown. If you want, you can also roast onion, garlic, and ginger for a minute before grinding.

- Grind all the ingredients and make a paste. Now to make dosa, heat a pan by pouring some oil and spread the batter on it.

- Pour oil all around the dosa and fry it well. Apply red chutney on the dosa. Apply some potato filling and serve hot dosa.
