Creamy Corn Sabji Recipe: It is common to feel like eating something hot and tasty in the rain showers. In this season, people often bring home corn or eat it on the roadside with salt and lemon. But if you are bored of eating the same boiled or roasted corn every time, then now is the time to try something new. Make this monsoon even more special this time. Here is a creamy corn vegetable made in a different style, which is as delicious to eat as it is wonderful to look at. It has the softness of cream, the tadka of spices, and the sweetness of corn together, which makes it everyone's favorite.

Method of making creamy corn vegetable
Step 1:
First of all, boil the sweet corn well. Canned corn is also available in the market, but fresh corn tastes better.
Step 2:
Now, put some ghee in a pan and add chopped onion and tomato pieces and cook. Keep it on the gas till it becomes slightly soft, then let it cool.
Step 3:
After it cools down, put it in the mixer. Also, add some cashews and make a soft paste of all.
Step 4:
Now, heat some oil or ghee in a pan. Add cumin seeds, then you can also add finely chopped green chilies and some whole spices (like bay leaves, cinnamon). After this, add degi mirch and fry till it smells fragrant.
Step 5:
Now add the paste that you had prepared. Stir it on a medium flame and fry it well, until it leaves oil.
Step 6:
Now add turmeric, coriander powder, vegetable masala, and some salt to it. Then add some water and cook it.
Step 7:
When the spices are cooked, add milk and fresh cream to it. Also, add some cream so that the vegetable becomes smoother and creamier.
Step 8:
Now add boiled sweet corn and mix well. If you feel that the gravy has become too thick, then you can add some more water.
Step 9:
Cook on a low flame for some time, and finally add finely chopped green coriander on top. If you want, you can also garnish it with some cream.
Required Ingredients
-Sweet corn (boiled) – 1 cup
-Onion – 2 medium-sized
-Tomatoes – 2 large
-Green chillies – 2 to 4 (finely chopped)
-Cashews – 8 to 10
-Fresh cream – 3-4 teaspoons
-Milk – 1 cup
-Ghee or oil – 2 teaspoons
-Cumin seeds – 1/2 teaspoon
-Turmeric – 1/2 teaspoon
-Degi mirch – 1/2 teaspoon
-Coriander powder – 1 teaspoon
-Sabji masala – 1 teaspoon
-Salt – as per taste
-Green coriander – a little (for garnish)
