Pea Barfi Recipe: With the arrival of winter, the aroma of ghee, slow cooking, and the tradition of sweet treats return to the kitchen. For years, traditional carrot halwa has been the go-to sweet treat during winters. Carrots are abundant during this season. Most Indian households make carrot halwa in the cold weather, but if you're tired of the same old traditional carrot halwa every year, this time try making a sweet treat from another popular winter vegetable. Besides carrots, green peas are also readily available in winter. Royal pea barfi, made from green peas, can be a delicious, healthy, and traditional sweet.

Peas, which we usually limit to vegetables or parathas, when combined with khoya, milk, and ghee, transform into a barfi that is pistachio-green in color, royal in taste, and has a texture just like store-bought barfi. Let's learn how to make pea barfi.

Ingredients for Pea Barfi:
Shelled green peas - two cups
Full cream milk - half a cup
Khoya (mawa) - one cup
Sugar - 3/4 cup (or to taste)
Ghee - 4 tablespoons
Cardamom powder - half a teaspoon
Chopped pistachios/cashews - for garnish

Easy Method to Make Pea Barfi:

Step 1 - Wash the shelled green peas and make a fine paste in a blender with a little milk. The smoother the paste, the tastier the barfi will be.

Step 2 - Heat the ghee in a pan. Now add the pea paste and sauté it on medium heat, stirring continuously. This step is crucial; continue until the raw pea smell disappears.

Step 3 - Now add the khoya and mix well. Once the khoya melts and blends into the pea mixture, add the sugar.

Step 4 - When the mixture thickens and starts leaving the sides of the pan, add the cardamom powder and cook for another minute or two.

Step 5 - Meanwhile, grease a plate with ghee.

Step 6 - Turn off the gas and spread the mixture onto the greased plate. Add the dried fruits on top. Once slightly cooled, cut into desired shapes.
