Rakhi Special Malai Ghevar Recipe at Home: When the festival of Rakshabandhan is there, and Ghevar does not come home, it is not possible. Ghevar is such a sweet, which is available only in the month of Sawan, especially on the days of the Rakhi festival. There is hardly anyone who does not like to eat Ghevar. This is the reason why there is a lot of Ghevar in the sweet shops of every city. People take kilos of Ghevar to their homes.

Ghevar is very tasty, but today people avoid eating more market sweets due to health concerns. In such a situation, we will tell you how to make Malai Ghevar at home. If Malai Ghevar is made at home, then there will be no adulteration in it. So you prepare Rakhi sweets by making Ghevar at home. Your brother, sister-in-law, and nephew will eat it with great gusto.
Ingredients for making Ghevar
Flour – 1 cup
Ice cubes
Milk – 1 cup
Curd – 2 tbsp
Ghee – for frying
Sugar – 1 cup
Water – 1/2 cup
Cardamom powder – 1/2 tsp
Mawa (khoya) – 100 grams
Saffron – a few threads (optional)
Cashews, almonds, pistachios – for decoration
Method
To make Ghevar, first you have to prepare the syrup. This is because after making Ghevar, it has to be put in the syrup immediately, so first prepare the syrup. For this, add sugar and cardamom powder to water and cook and prepare a thick syrup. After the syrup is ready, keep it aside.
Now it is time to prepare the batter of Ghevar, so for that, put 4-5 ice cubes in a mixer jar and pour ghee on it. Now blend it. After blending, the ghee will separate, and the water will remain at the bottom. Now you have to use this water to make the batter of Ghevar. For this, add flour, semolina, baking powder, curd, and cold water to the water and whisk it. You do not have to make it too thin or too thick.

After the batter is ready, it is time to make Ghevar, so for that, put ghee in the pan, place the Ghevar mold in it, and heat the ghee. When it is hot, fill the batter in a bottle with a hole and slowly pour the batter into the mold. Pour the batter right in the center, so that there is a hole in the middle. By doing this, the latticed batter will be ready. After this, fry it till it becomes golden.
When it is cooked, take it out and keep it like this for some time, so that the excess oil drains out. Now dip it in sugar syrup. After dipping it in sugar syrup, take it out and place it in a tray. Finally, apply mawa in it. To decorate it from above, you can put cashew nuts, pistachios, almonds and some strands of saffron on it. Mawa Ghevar is ready.
