Kaju katali recipe, If you are asked to tell an Indian sweet that is liked by people of all ages, what will be your answer? Like most people, if your answer is also Kaju Katli, then you are right. This delicious sweet made of cashew and milk is the pride of every Indian festival. The special thing is that making Kaju Katli at home is very easy, and believe me, homemade Kaju Katli is more delicious than the katli brought from the market.

Method of making Kaju Katli:
First of all, put cashews and milk in a blender and grind them finely, till it becomes a smooth paste. Now put this paste in a pan, add sugar, and cook on low flame. Keep stirring till the sugar dissolves. Now let the mixture boil well, and then keep stirring on medium flame till it thickens and starts leaving the sides of the pan. Now you will get a dough-like consistency. Remove from heat and allow it to cool slightly until you can touch it with your hand. Now flip it onto a greased thali or plate and roll it out to 1/4 cm (1/8 inch) thickness. Garnish with silver foil and allow it to cool completely. Once cooled, cut into diamond-shaped pieces.
Apart from the classic Kaju Katli, you can also make Kaju Katli with different flavors by making slight variations in it. Apart from this, here are some new and exciting variations of Kaju Katli that you can try at home.
1. Kesar Kaju Katli: Use saffron to give a royal touch to the traditional Kaju Katli. While making Kaju Katli, soak a little saffron in milk and add it. The color of the katli will enhance the colour of the katli.
2. Rose Kaju Katli: Give a twist to the classic kaju katli and make the Rose Kaju Katli, which is made with cashews, milk powder, sugar syrup, and rose petal extract.
3. Cranberry Kaju Katli: If you love the sweet and sour flavour together, then the Cranberry Kaju Katli is perfect for you. It has a mix of cashews, dried cranberries, nuts, cardamom, and ghee which makes it unique and delicious.
4. Chocolate Kaju Katli: The combination of chocolate and cashews has always been amazing. To make chocolate kaju katli, top it with a layer of dark chocolate ganache and Dutch cocoa powder.

5. Strawberry Kaju Katli: If you are looking for something different and fruity, then do try the Strawberry Kaju Katli. This dessert is full of the sweet and fruity flavour of strawberries. Make sure to use skimmed milk instead of full-fat cream.
