2 tablespoons ghee
2 tablespoons almonds
150 grams of jaggery
2 cloves
1/2 teaspoon fennel seeds
2 tablespoons raisins
2 pinches of salt
Recipe
First, wash the rice thoroughly and soak it in water for about 20 minutes. Soak the saffron strands in 4 tablespoons of hot water and set aside.
Now take a pot. Add jaggery, fennel seeds, cinnamon, crushed cardamom, and 1 cup of water. Mix well and let it cook for about 10-15 minutes.
Add 2 pinches of salt and the soaked saffron and stir. Now, heat the ghee in a pan. Add cashews, almonds, and raisins, and fry.
- Mix well and cook until the raisins swell and the cashews and almonds turn light brown. Remove the dried fruits and set aside.

- Add the soaked rice to the remaining ghee along with 1 cup of water and cover with a lid. Cook the rice until all the water is absorbed.
- The rice may appear a little raw, but don't worry, it is cooked further in the jaggery syrup.
- Now pour the jaggery syrup into the pan. Let it cook for about 6-8 minutes, or until the rice absorbs the jaggery syrup.
- Add the roasted nuts and mix well. Cook for the last two minutes and then turn off the heat. Jaggery rice is ready.
