Ingredients for Mathri
- 1 cup all-purpose flour (maida)
- ½ cup semolina (sooji)
- 2-3 tbsp clarified butter (ghee)
- Salt to taste
- 1 tsp carom seeds (ajwain)
- 1 tsp dried fenugreek leaves (kasuri methi)
- A pinch of baking soda
- ½ tsp black pepper (crushed)
- 1 tsp nigella seeds (kalonji)
- Oil for frying
How to Make Crispy Mathri
- Mix Dry Ingredients: In a mixing bowl, combine all-purpose flour and semolina. Add ghee and mix well until the texture becomes crumbly. This step ensures that your Mathri turns out crispy.
- Add Spices: Now, mix in salt, black pepper, carom seeds, and nigella seeds. Crush dried fenugreek leaves (kasuri methi) with your hands and add it to the mixture. Also, add a pinch of baking soda.
- Prepare the Dough: Gradually add a little water and knead into a firm dough. Make sure the dough is not too soft—it should be tight for the perfect crunch.
- Rest the Dough: Cover the dough and let it rest for 15-20 minutes.
- Shape the Mathri: Heat oil in a pan for deep frying. Meanwhile, take small portions of the dough, roll them into balls, and press them slightly to flatten.
- Fry to Perfection: Fry the Mathris on medium heat until they turn golden and crispy. Remove and place them on a paper towel to drain excess oil.
- Cool & Store: Once cooled, store them in an airtight container and serve to your guests on Holi.
