Ingredients for Rice Appe
Rice: 1 cup
Urad dal: 1/4 cup
Fenugreek seeds: 1/4 teaspoon
Salt: to taste
Green chilies: 1 to 2 (finely chopped)
Ginger: 1-inch piece (grated)
Curry leaves: 5 to 6 leaves (finely chopped)
Coriander leaves: 2 tablespoons (finely chopped)
Onion: 1 medium (finely chopped, optional)
Carrot/capsicum: 2 tablespoons (finely chopped, optional)
Mustard seeds: 1/2 teaspoon
Oil: Very little (for frying)

How to Make Rice Appe
Step 1
The heart of rice lies in its batter. To make it, you need to use equal amounts of rice and urad dal. First, wash the rice and dal and soak them in water for 5 to 6 hours. Once they've risen well, grind them in a mixer to form a smooth batter. Leave this batter to ferment in a warm place for at least 6-8 hours, or overnight. Fermentation makes the bread puffy and soft.

Step 2
Once the batter is ready, add salt, finely chopped green chilies, ginger, and a little coriander. If desired, you can also add finely chopped onions, curry leaves, and your favorite vegetables (like carrots or bell peppers). This enhances both the flavor and nutrition of the app. Adding vegetables also gives the appe an attractive color. If you're in a hurry and the fermentation hasn't yet begun, you can make them instantly by adding a little Eno or baking soda to the batter.

Step 3
A special "appe pan" is used to make the appe. First, heat the appe pan on the stove and pour just a drop of oil into each small groove. Add the mustard seeds and let them crackle slightly. Now, spoon the batter into each groove. Remember not to fill the grooves, as the appe will puff up. Cover the pan and cook over low heat for 3 to 4 minutes.

Step 4
When the appe are lightly golden brown on one side, gently flip them over. Cook the other side for 3 to 4 minutes, until crisp. You'll notice that your appe are perfectly round and puffed up.
