2 cups wheat flour

1 tsp ghee

Salt to taste

Water (for kneading)

1 cup gram lentils

1 cup jaggery (burai or ground)

½ tsp cardamom powder

1 tsp ghee

1 pinch saffron

Method to make Puran Poli

Wash the gram lentils thoroughly and soak them in water for 4-5 hours.

Cook the soaked lentils in a pressure cooker till 2-3 whistles.

Drain the water of the cooked lentils and mash them to make them smooth.

Heat ghee in a pan and add the mashed lentils and fry them.

When the lentils start drying a bit, add jaggery to it and mix well.

When the jaggery melts and thickens, add cardamom powder and saffron and mix.

When the pan cools down, make small balls.

Mix wheat flour, ghee, and salt in a vessel and knead a soft dough.

Keep the dough covered for 15-20 minutes.

Make small balls of dough and roll them in a circular shape.

Place a ball of puran in the middle of the rolled dough and close it from all sides.

Roll it slowly and make a thin roti (keep in mind that the stuffing does not come out).

Heat the pan and place the poli on it, apply ghee on both sides and fry till it becomes golden.
Keep the gas flame medium, so that the poli gets cooked well.
Serve hot puran poli.
