Method

To prepare Ghevar, you first have to prepare its batter. To prepare this batter, first of all, you have to put ghee in a vessel and put ice cubes in it. After this, keep that ice cube in the middle of the ghee and beat it with your hand. When you beat it continuously, it will start becoming creamy after some time. When it becomes of a creamy texture, now add cold milk to it and then slowly add flour. After this, prepare a thin solution by adding cold water little by little. Keep in mind that there should not be a single lump in this solution.

Now it is time to prepare Ghevar, so first of all heat ghee or refined oil in the Ghevar mold. When it gets hot, pour the batter slowly with the help of a spoon. When you pour the batter slowly, it will spread and become springy. There will be a hole in the middle. Wait for 10-15 seconds and then pour some batter again. Repeat this process 4-5 times. After it is ready, fry it till it becomes golden. When it is cooked, take it out and keep it aside.

While it is kept aside, prepare its syrup. For this, boil water and sugar together till a single string syrup is formed. After the syrup is ready, add saffron and cardamom powder to it. Dip the prepared Ghevar in lukewarm syrup. When it is well immersed in the syrup, take it out and apply a layer of rabri or mawa on it. Put melon seeds on top and apply silver foil. This Ghevar is ready.
