Ingredients for Bhature
All-purpose flour (maida) – 3 cups
Semolina (suji) – 1/4 cup
Yogurt (dahi) – 1/2 cup
Sugar – 1 tsp
Baking soda – 1/4 tsp
Salt – to taste
Lukewarm water

Method for preparing Chole
First, place the soaked chickpeas in a pressure cooker. Add salt and the sachet of tea leaves, then pressure cook for 5–6 whistles. Adding tea leaves gives the chole a deep, attractive color.
Next, heat oil in a pan. Add cumin seeds and let them splutter. Then, add the onions and sauté until golden brown. Follow this by adding the ginger-garlic paste and green chilies, and cook well. Add the tomatoes along with the spices (turmeric, coriander, and red chili powder) and sauté thoroughly.
Once the masala begins to release oil, add the boiled chickpeas. Add a little water and cook over low heat for 10–15 minutes. Finally, stir in the chole masala and garam masala. Your delicious chole (chickpea curry) is ready.
How to make bhature:
In a large bowl, combine all-purpose flour (maida), semolina (suji), salt, sugar, and baking soda. Add yogurt and mix well. Gradually add lukewarm water as needed to knead into a soft dough.
Cover the dough and let it rest for 2–3 hours. Afterward, divide the dough into small portions (balls) and roll them out. Heat oil in a pan and deep-fry the bhature until they turn golden brown on both sides. The bhature will puff up as they cook.

Serving suggestion:
Serve the piping hot chole bhature with sliced onions, green chilies, lemon wedges, and mango pickle. You can also sprinkle a little chaat masala on top if desired. This delicious and hearty meal is sure to be a hit with the whole family.
