Main ingredients for making kimchi
Cabbage – 1 medium size
Salt – 1/4 cup
Water – about 5 cups
For the paste
Garlic – 8-10 cloves
Ginger – 1-inch piece
Onion – 1 small
Korean red chili flakes – according to taste
Soy sauce – 1 tablespoon
Sugar – 1 teaspoon
Water – 2 tablespoons
Other ingredients
Green onion – 3-4
Carrot – 1
Radish – 1/2 cup

Method
To make kimchi, first wash the cabbage thoroughly. After this, cut it into 4 parts and then cut it into pieces. Keep in mind that you have to cut it lengthwise. Now keep the cabbage in a large bowl and then add salt to it. Add a little water and leave it like this for 1.5 to 2 hours. Keep stirring it in between, so that the salt gets mixed well in the cabbage.
Now wash this cabbage so that only the taste of salt remains in it and the extra salt is removed. After this, mix garlic, ginger, onion, sugar, chili flakes, soy sauce, and some water in the mixer and make a paste. Its paste has to be made very fine. Now put salted cabbage, long and finely chopped carrots, and finely chopped radish in a bowl. After this, mix the ground masala in it.
Finally, add green onion on top. Now keep it in a glass jar at room temperature for one to two days. After one day, keep it in the fridge for a week. After a week, its taste increases manifold. You can eat kimchi with rice, noodles, Korean stews, fried rice, or as a side dish for breakfast.
