As winter arrives, everyone's appetite increases, and eating and drinking become more enjoyable. Increased digestive capacity means you can eat more without any problems. It's safe to say that this season is for both enjoying delicious food and improving your health. While cold foods are consumed in summer, winter brings a variety of treats like peanuts, gajak, and carrot halwa. Different types of gajak start appearing in the market. This time, you can make and enjoy dry fruit gajak or chikki. It's not only beneficial for your health, but its taste will also leave you mesmerized. If your gajak doesn't stick to your teeth, breaks easily, and has a crispy texture, then it means your gajak is perfectly made. The whole family will enjoy this dry fruit gajak, full of the flavors of cashews, almonds, pistachios, raisins, sesame seeds, and jaggery.

Ingredients:
Sesame seeds: 1 cup
Ghee: 1-2 tablespoons
Jaggery: 200 grams
Dry fruits: 100 grams, finely chopped
Peanuts: 50 grams

Method:
- First, place a pan on the stove. Add the sesame seeds to the pan and roast them until lightly browned.
- Once the seeds are well roasted, spread them on a plate and let them cool. Now, roast the dry fruits like cashews, pistachios, almonds, and peanuts over low heat.
- Make sure the heat is not too high, otherwise the nuts will turn black and taste bitter. Remove the roasted nuts from the heat and add ghee to the pan.

- Add the jaggery and let it melt. Mix well so that the jaggery doesn't stick to the pan. Continue doing this for 1-2 minutes.
- Once the jaggery is heated, add the roasted sesame seeds. Mix well to prevent lumps from forming.
- Keeping the heat low, add the roasted dry fruits to this sesame-jaggery mixture and mix well. Let it cook for 1-2 minutes.
- Now, take a flat plate and grease it with a few drops of ghee. Pour the sesame-jaggery and dry fruit mixture onto this plate and spread it evenly.
- Once it has cooled slightly, cut it into square or rectangular pieces as desired. Now let the sesame-jaggery brittle cool down to room temperature.
