Every state has some popular food items that people like very much. Such things even spread all over the country. Right now, we are talking about Dalma, a popular dish eaten in Odisha. This dish is also offered as Prasad in the Swami Jagannath Temple. Whether it is a pooja at home or a wedding ceremony, it is given prominence in the menu. Its specialty is that the dal and vegetables present in it help in providing full nutrition to the body. No special preparation is required for this. It can be prepared with the seasonal vegetables available at home. It is liked more with rice. If you want, you can enjoy it with roti as well. It is very beneficial for children.

Ingredients
Moong dal – 1 cup
Tuhar dal – 1 cup
Gram dal – 1 cup
French beans – 100 grams
Tomatoes – 3 roughly chopped
Onion – 1 sliced
Potato – 2 sliced
Carrot – 2 sliced
Brinjal – 1 sliced
Ginger – 1 tablespoon grated
Green chilli – 3 finely chopped
Coriander leaves – ½ cup
Panchphoran – 1 teaspoon
Bay leaves – 2 whole
Cinnamon – 2 pieces
Black pepper – 4 seeds
Cardamom – 2 whole
Cloves – 2 whole
Cumin seeds – 2 teaspoons
Red chilli – 2 whole
Mustard oil – 3 tablespoons
Turmeric – 1 teaspoon
Salt – according to taste
Method (Recipe)
- First of all, dry roast black pepper, cumin, cinnamon, cardamom, and cloves in a pan for 2-3 minutes.
- When these spices cool down, grind them in a mixer. Dry roast tur, moong, and chana dal on a low flame.
- Boil water in a cooker. Now add lentils, turmeric, salt, bay leaves, all vegetables, and ginger-chillies and cook for 4 to 5 whistles.
- Heat oil in a pan. Add panchphoran and whole red chilli tadka in it and turn off the gas.
- Add this tempering mixture to the dal. Finally, add ground spice powder and green coriander and stir the dalma well.
