If you want to eat something healthy and tasty for breakfast or lunch, then a vegetable sandwich is a great option. Also, it does not take much time to prepare, which makes it the best food for a hurry. Let's know how to make a tasty and healthy vegetable sandwich.

Ingredients:
4 bread slices
1 boiled potato
1 small cucumber
1 tomato
1 capsicum
1/2 cup cabbage
1/4 cup carrot
2 green chillies
2 tablespoons butter or mayonnaise
1 teaspoon chaat masala
1/2 teaspoon black pepper powder
1/2 teaspoon salt
Coriander leaves
1 teaspoon lemon juice
Method:
First of all, wash and clean all the vegetables thoroughly and cut the cucumber, tomato, and capsicum into thin slices.
Grate carrots and cabbage. Also, finely chop green chillies and coriander leaves.
Now add mashed potatoes, grated carrots, cabbage, green chillies, and coriander leaves to a bowl.
Then add salt, black pepper powder, chaat masala, and lemon juice, and mix all the ingredients well.
Take bread slices and apply butter or mayonnaise on them.

Now spread the vegetable mixture stuffing on one slice and place the cucumber, tomato, and capsicum slices on it.
Place the second bread slice on it and press lightly.
Now, if you like crispy sandwiches, then grill it in a sandwich maker or toaster. But if you want, you can eat fresh sandwiches even without grilling.
Cut the sandwich diagonally, decorate it on a plate and serve with green chutney or tomato ketchup.
