Peanut Burfi Recipe -
Preparation Time - Approximately 15 minutes
Cooking Time - Approximately 15-20 minutes
Serves - 4-5

Ingredients -
Peanuts (raw) - 2 cups (approximately 250 grams)
Sugar - 1 to 1.5 cups (as per your preference)
Water - 1/2 cup
Ghee - 2 tablespoons (for greasing the plate and adding the mixture)
Milk Powder (optional) - 1/4 cup (for softening the burfi)
Cardamom Powder (optional) - 1/2 teaspoon
Pistachio/Almond Slivers - for garnishing

Method of Preparation
First, roast the peanuts in a pan over medium-low heat for 5-7 minutes. Stir constantly until the shells begin to separate easily.

Cool the roasted peanuts and remove their shells. Put the peeled peanuts in a mixer grinder and grind them into a fine powder. Be sure to stir the mixer intermittently while grinding to prevent the peanut oil from escaping.

Now, add sugar and water to the same pan and heat over medium heat. Once the sugar dissolves, bring it to a boil. Test the syrup by pressing it between your finger and thumb; if a thin string forms, it means it's ready.

When the syrup is ready, reduce the heat. Immediately add the ground peanut powder and milk powder, and mix thoroughly and quickly to avoid lumps.

Now, add 1 teaspoon of ghee and cardamom powder. Stir until the mixture thickens and begins to leave the sides of the pan.

Now, grease a plate or tray thoroughly with ghee. Immediately transfer the mixture onto the greased plate and spread it evenly with a spatula, smoothing it out.

Sprinkle pistachio or almond slivers on top and press them down gently.

Let the mixture cool slightly for 10-15 minutes. While it's still warm, cut it into desired shapes with a knife.

Let the barfi cool completely. Once cooled, remove the pieces.
