There are countless potato dishes. Potato curry is a common recipe that is prepared and eaten in almost every household. Its varieties are also long. From kitchens to street food, potatoes are popular. Today, we're going to share a recipe for one such potato dish: Banarasi Dum Aloo. If you haven't tried it yet, you can easily make it at home by following our method. It doesn't take long to prepare. Everyone will enjoy this delicious dish. You can try it for lunch or dinner. After eating this amazing curry, everyone will be full of praise. As a new and different potato dish, it's a superhit.

Ingredients
Small potatoes – 1/2 kg
Chopped tomatoes – 4
Cream/malai – 2 tbsp
Red chili powder – 4
Cashews – 2 tbsp
Cumin seeds – 1 tsp
Fennel seeds – 1 tsp
Kasuri methi – 1 tbsp
Red chili powder – 1/2 tsp
Chopped ginger – 1 inch
Garam masala – 1/2 tsp
Desi ghee – 1 tbsp
Green cardamom – 4
Chopped coriander leaves – 1 tbsp
Oil – for frying
Salt – to taste
Recipe
First, peel the potatoes, wash them thoroughly in clean water, and prick them all over with a fork or toothpick.
Then, wipe the potatoes dry with a clean cloth. After pricking all the potatoes, set them aside on a plate. Pour oil into a pan and heat it over medium heat.
When the oil is hot, add the potatoes and fry until golden brown. Drain on a plate using kitchen paper.
Now, heat a little oil in another pan. Add cumin seeds, fennel seeds, red chilies, finely chopped tomatoes, and chopped cashews, and fry.
Keep the heat on medium. This mixture will take about 5 minutes to fry. Now turn off the heat and let the tomato masala cool.
After this, put the tomato masala in a mixer and grind it to a puree. You can add a little water if needed.
Now, heat the ghee in a pan. After the ghee melts, add green cardamom and dried fenugreek leaves and fry for a few seconds.
After this, add the tomato purée and salt to taste. Stir the gravy occasionally with a ladle and let it cook.

- After some time, add two cups of water and let the ingredients boil. Once the gravy comes to a boil, add the fried potatoes and cover the pan, and let it cook on a low flame for 15 minutes.
- Keep stirring the vegetables with the help of a ladle. Add fresh cream and garam masala and mix it. After it comes to a boil, turn off the flame.
- Now, Banarasi Dum Aloo is ready. Garnish it with chopped green coriander leaves before serving. Serve the vegetable with roti, naan, or paratha.
