Ingredients for Making Annakut
The unique feature of Annakut Prasad is that there are no fixed rules. You can use at least five to seven types of vegetables, as per your choice and available in the market.

Vegetables: Potatoes, cabbage, carrots, peas, eggplant, pumpkin, radish, and beans. Remember, the more vegetables, the better the taste.

Other ingredients: ginger, green chilies, tomatoes, ghee or oil, asafoetida, cumin seeds, turmeric, coriander powder, garam masala, and salt.

Method for making Annakut
Wash all the vegetables thoroughly and chop them into thick pieces. Be careful not to chop them too finely.
Next, heat ghee in a large pot or pan. Add asafoetida and cumin seeds and let them crackle.
Now add the tomatoes and green chilies. When the tomatoes soften slightly, add turmeric and coriander powder and sauté over low heat for 1 minute.


Then add all the chopped vegetables to the spices. Season with salt and mix well.
The specialty of Annakut is that it cooks in the vegetables' own water. Cover and let it simmer for 15 to 20 minutes.
Finally, when the vegetables are tender, add garam masala and a little dry mango powder (or lemon juice) and mix.
