When you don't have any special vegetables at home, here is how to make halwai-style 'Dhaniya Aloo'..

If you are bored of eating the same old simple potato dishes, why not try something new and zesty this time? 'Dhaniya Aloo' (Coriander Potatoes) is a dish that is incredibly easy to prepare yet tastes just like the delicious potato dishes served at weddings or by professional caterers.

Whether for lunch or dinner, this spicy twist is sure to whet your appetite. The freshness of green coriander combined with the tanginess of spices makes this dish truly special. Let’s look at the easiest way to make it.

**Ingredients for Dhaniya Aloo**
Boiled potatoes: 4 to 5 (cut into cubes)
Fresh coriander leaves: 1 large cup (including stems, washed thoroughly)
Green chilies: 2 to 3 (adjust according to your spice preference)
Ginger: 1-inch piece
Cumin seeds: 1 teaspoon
Asafoetida (Hing): 1 to 2 pinches
Coriander powder: 1 teaspoon
Dry mango powder (Amchur) or lemon juice: 1 teaspoon
Garam masala: ½ teaspoon
Salt: To taste
Oil or Ghee: 2 to 3 tablespoons

**Easy Method to Make Dhaniya Aloo**
First, combine the fresh coriander leaves, green chilies, ginger, and a very small amount of water in a mixer-grinder to make a thick paste. This green paste is the soul of the dish.
Next, heat oil or ghee in a wide pan or *kadahi* (wok). Once hot, add the cumin seeds and asafoetida. When the cumin seeds begin to crackle, add the coriander powder and sauté lightly for a few seconds.

Now, add the prepared green coriander paste to the pan. Sauté it over medium heat, stirring continuously, for 2 to 3 minutes. When the masala starts releasing a little oil from the edges, it indicates that it is cooked properly.

Finally, add the boiled and cubed potatoes to the sautéed masala. Also, add the salt, garam masala, and dry mango powder (or lemon juice). Gently mix everything so that the green spice coating thoroughly coats every piece of potato. Cover and cook on a low flame for 3 to 4 minutes, allowing the potatoes to absorb all the flavors of the spices.

Then, turn off the heat, and your tangy, delicious, and aromatic *Halwai*-style 'Dhaniya Aloo' (Coriander Potatoes) are ready to serve.
If you want this dish to have the rich, royal flavor typical of weddings or *dhabas*, add 4–5 cashews or a handful of roasted peanuts while grinding the coriander paste. This imparts a wonderful, nutty richness to the masala.
