You have surely tasted the distinct flavors of Arhar, Moong, Masoor, and Chana dal in your daily meals, but have you ever tried *Panchkuti Dal*? It is a traditional lentil dish enjoyed in Uttar Pradesh and Rajasthan.

**Panchkuti Dal Recipe**
Panchkuti Dal is a blend of Arhar, Chana, Masoor, Urad, and Moong dals. It is not only delicious but also packed with nutrition. Let’s look at the special recipe:

**Ingredients**
1/2 cup Moong dal (with skin)

2 tbsp Arhar dal

2 tbsp Chana dal

1 tbsp Masoor dal

1 tbsp Urad dal

2 finely chopped green chilies

1 tbsp oil

1 tsp grated ginger

1 tsp cumin seeds

1 pinch asafoetida (hing)

1 tsp coriander powder

1/2 tsp turmeric powder

1 tsp red chili powder

1 tsp garam masala

2 bay leaves

2 tsp dry mango powder (amchur)

2-3 cloves

1 tbsp tamarind pulp

Salt to taste

Water as required

**Method**
To make Panchkuti Dal, first mix the Moong dal (with skin), Arhar dal, Chana dal, Masoor dal, and Urad dal in a bowl and wash them thoroughly.

Let the mixture sit, covered, for at least 10 minutes.

Next, take a pressure cooker, add the mixed lentils, and pour in the required amount of water.

In the next step, add salt to taste and 1/2 teaspoon of turmeric powder, then place it on the stove to boil.

After 2-3 whistles, check if the lentils are cooked properly; then turn off the flame and allow the steam to escape.

Meanwhile, take a non-stick pan and add 1 tablespoon of oil.

Once the oil is hot, add the cumin seeds, asafoetida, bay leaves, and cloves, and sauté them. Now, add 2 finely chopped green chilies and 1 teaspoon of grated ginger to it and sauté.

Once these are sautéed, mix in 1 teaspoon of red chili powder, 1 teaspoon of garam masala, 2 teaspoons of dry mango powder (amchur), 1 tablespoon of tamarind pulp, and 1 teaspoon of coriander powder.

Let it cook for a while; when the masala starts releasing oil, it indicates that it is cooked.

Finally, add the boiled Panchkuti dal and mix well.

 

Cook this on medium heat for at least 4–5 minutes.

Your traditional Panchkuti dal is ready; serve it with parathas or rice.
