For how many people: 2
Ingredients:
3 cups idli/dosa batter
1/2 cup finely chopped onion
1/4 cup finely chopped tomato
1/4 cup finely chopped green capsicum
2-3 green chillies, finely chopped
2 tablespoons finely chopped coriander
Some ginger
Oil or ghee, mustard, curry leaves.
Salt to taste
Method:
First of all, if you have already prepared idli/dosa batter, then stir it well. If the batter is too thick, then add some water to make it a little thinner.
Now wash all the vegetables and chop them finely.
Now, heat a non-stick pan on medium flame. Once heated, apply some oil to it and keep some plain water in a bowl.
Once the pan is heated, pour the batter in the centre with the help of a ladle and spread it slowly in a circular shape. Do not spread it too thin and big like a dosa. Keep its thickness around ½ inch.
Immediately, add chopped vegetables like onion, tomato, green chilli, and coriander leaves on top of the uttapam. Press it a little with a light hand so that it sticks to the batter.

Now reduce the flame from medium to low. Pour some oil or ghee all around and on the vegetables. This will make the edges crispy, and the vegetables will cook well.
When the bottom of the uttapam becomes golden brown and starts rising from the edges, flip it. Let it cook on the other side for 1-2 minutes as well.
Now, heat some oil in a small pan. Add mustard seeds to it. When it crackles, add curry leaves and green chillies. Pour this seasoning over the prepared uttapam.
Take the hot uttapam off the pan. Serve it with coconut chutney, sambhar or tomato chutney.
