Roasted Tomato Sauce Pasta Recipe: If you are looking to prepare something delicious and fun for your children’s evening snack, Roasted Tomato Sauce Pasta is an excellent choice. Kids will love its tangy and mildly acidic flavor. What makes it special is that the sauce is prepared by first thoroughly roasting the tomatoes, which significantly enhances both the flavor and aroma of the pasta. It can be easily prepared at home. Let’s look at a simple recipe for making Roasted Tomato Sauce Pasta.

To prepare the roasted tomato sauce, you will need 5 tomatoes, 2 onions, 10–12 garlic cloves, 2 teaspoons of oil, a pinch of salt, and a little warm water. For boiling the pasta, you will need 200 grams of pasta, enough warm water, and a pinch of salt. Additionally, for the seasoning/sauce base, gather 2 tablespoons of olive oil, 1 tablespoon of Kashmiri red chili powder, 100 grams of cream cheese, 2 teaspoons of honey, half a teaspoon of black pepper, and 15 basil leaves.
Step 1: Begin by cutting the tomatoes in half. Heat a pan on the stove and add a little oil. Once the oil is hot, place the tomatoes in the pan, cut-side down. Add the chopped onions, garlic cloves, and a pinch of salt to the pan. Roast all the ingredients over medium heat. Stir the onions occasionally to ensure everything roasts evenly and the tomatoes become soft and fully cooked.
Step 2: Once the tomatoes are well-roasted on one side, flip them over and add a little warm water to the pan. Cover the pan and let the ingredients cook for 5–6 minutes, or until the tomatoes are completely soft. Afterward, turn off the heat and allow the mixture to cool slightly. Now, place the roasted tomatoes, onions, and garlic into a mixer jar and blend them thoroughly. This will create a smooth, thick purée that will serve as a delicious base for your pasta.
Step 3: Fill a large saucepan with the required amount of water, add a pinch of salt, and bring it to a boil. Once the water is boiling well, add 200 grams of pasta. Cook the pasta over medium heat for about 10 minutes. Ensure the pasta becomes soft, but be careful not to overcook it. Once done, turn off the heat, drain the water, and set the pasta aside. (For an evening snack, you could also prepare some crispy soya balls to go with your tea.)
Step 4: Heat some olive oil in a saucepan. Add Kashmiri red chili powder and stir briefly. Next, add the prepared roasted tomato purée and mix everything well. Add the cream cheese and cook while stirring continuously until the sauce becomes smooth and creamy. Taste the sauce as you go and adjust the salt and spices as needed. Your delicious, creamy roasted tomato sauce is now ready.
Step 5: Once the pasta is cooked, add it to the prepared roasted tomato sauce. Stir in some honey, black pepper, and fresh basil leaves. Mix everything well so that the sauce coats the pasta thoroughly. Cook over low heat for another 2–3 minutes. Your delicious, rich, and creamy roasted tomato-garlic pasta is now ready. Serve it hot to the children.
