Ingredients for Mango Modak:

Ripe mango pulp – 1 cup

Ghee – 1 tsp

Dried coconut powder – 1 cup

Mawa (khoya) – 1/2 cup

Sugar – 1/3 cup

Cardamom powder – 1/2 tsp

Cashews and almonds (finely chopped) – 2 tsp

Method of preparation: Heat ghee in a pan, add mango pulp and cook for 4-5 minutes. Now add mawa and coconut powder and mix. Add sugar and cook till the mixture thickens. Mix cardamom powder and dry fruits, then let it cool. Now pour a little mixture in the modak mould and shape it. If you want, you can make modaks by hand without a mould. Keep it in the fridge for 10 minutes and serve.

Children love cheesecake. If there is a child in the house or a guest is coming, then you can make it at home with biscuits. There is no need to bake to make it.

Ingredients for Mango Cheese Cake:

For the base:

Crushed biscuits - 1 cup

Melted butter - 1/4 cup

For cheese filling:

Cream cheese - 1 cup

Whipping cream - 1 cup

Mango pulp - 1 cup

Sugar - 1/3 cup

Gelatin or agar agar - 1 teaspoon

Hot water - 1/4 cup

Method of preparation: First of all, mix melted butter with biscuit powder and prepare the base by pressing it into a cake tin. Keep it in the fridge for 30 minutes. Now dissolve the gelatin in hot water and let it cool. Make a batter by beating cream cheese, mango pulp, sugar, and whipping cream. Add dissolved gelatin to it. Now pour this mixture on the biscuit base and let it set in the fridge for 4-6 hours or overnight. Garnish with mango slices or pulp on top.

Mango Kesari is a pudding which is very famous in South India. It is also called mango sheera. It is used in every auspicious work.

Ingredients for Mango Kesari:

Semolina (Rava) - 1 cup

Mango pulp - 1 cup

Ghee - 4-5 tsp

Water - 2 cups

Sugar - 1/2 cup (according to taste)

Saffron - some threads (soaked in hot milk)

Cardamom powder - 1/2 tsp

Dry fruits - for garnish

Method of preparation: First of all, put 1 tsp ghee in a pan and fry the semolina till it turns light golden. Now heat water and add saffron and mango pulp to it. Slowly add this mixture to the roasted semolina and keep stirring continuously so that lumps do not form. When the semolina absorbs the water, add sugar and ghee. Cook it for 5-7 minutes until the halwa starts releasing ghee. Now add cardamom powder and dry fruits. Mango Kesari is ready. serve it hot.
