Yes, you can prepare a cake at home without a single pinch of refined flour that's soft as cotton and incredibly delicious. The best part is that you don't need any fancy equipment, and it's ready in just an hour.
Ingredients for Semolina Cake
Semolina: 1.5 cups (fine)
Yogurt: 1 cup (fresh and lightly whisked)
Sugar: 3/4 cup (powdered)
Oil/Butter: 1/2 cup (odorless oil)
Milk: As needed (to adjust the batter consistency)
Baking powder: 1 teaspoon
Baking soda: 1/2 teaspoon
Flavoring: Vanilla essence or cardamom powder
Method for making Semolina Cake
In a bowl, whisk together yogurt and sugar until the sugar is completely dissolved. Now add the oil and mix well.
Gradually add the semolina to this mixture. Make sure there are no lumps. Now cover and let it rest for 20 minutes. This is the most important step, as the semolina needs time to swell.
After 20 minutes, the semolina will have absorbed the milk/yogurt. If the batter seems too thick, add a little milk to achieve a creamy consistency.
Now add the baking powder and baking soda. Add a teaspoon of milk on top of them to activate them and mix gently.
Pour the batter into a greased pan and bake in a pan or oven over low heat for 30-35 minutes.
