Masala bhaat is a great option for lunch or dinner. You can prepare it in less time. Its taste is also amazing.
For how many people: 4
Ingredients:
Basmati or normal rice, two cups
Water four cups
Oil or ghee, three tablespoons
Cumin seeds, one teaspoon

Bay leaf one
Cinnamon one piece
Cloves two to three
Big cardamom one
Onion two (finely chopped)
Ginger-garlic paste, one tablespoon
Tomatoes two (finely chopped)
Green chillies (chopped)
Carrot half cup (chopped)
Beans, one cup (chopped)
Peas half cup
Capsicum half cup (chopped)
Turmeric powder, half a teaspoon
Red chilli powder, one teaspoon
Coriander powder, one teaspoon
Garam masala, one teaspoon
Salt according to taste
Green coriander
Method:
Wash the rice and soak it in water for at least 15 to 20 minutes.
Now, heat oil or ghee in a pan.
Add cumin seeds, bay leaves, cinnamon, cloves, and cardamom, and fry them.
After this, add the onion and fry it till it turns golden.
Add ginger-garlic paste and green chillies and stir for a minute.
Now add tomatoes and cook till they become soft.
Now add turmeric, red chilli, coriander powder, and salt.
After this, add all the vegetables and fry for some time.
Now add the soaked rice and mix it well with spices and vegetables.
Add four cups of water, cover and cook on medium flame.
When the rice is cooked and the water dries up, add garam masala and green coriander and cover it.
Hot veg masala bhaat is ready.

You can serve it with raita, papad, and salad.
You can make it quickly in lunch or dinner.
