1 star anise

Salt to taste

Water as required

1/2 cup dry fruits/nuts

2 medium-sized tomatoes

10-12 garlic cloves

2-3 green chilies

1 tsp lemon juice

Method
First, cook the rice in a pressure cooker.

Next, heat oil in a large vessel.

Add large chunks of onion and sauté them.

Then, add the bay leaf, cinnamon, cumin seeds, fennel seeds, and cardamom, and cook briefly.

Once the whole spices are roasted, add the ginger-garlic paste and cook.

Now, add the chopped vegetables—carrot, cauliflower, peas, and potato—and mix well.

After that, add the paneer pieces and fry them until golden.

Add red chili powder, black pepper, salt, and biryani masala.

Mix in the yogurt with the vegetables and let it cook for a while.

Add a little water and allow the vegetables to cook through. Once the vegetables are cooked, add the rice as the final step and mix everything thoroughly.

Meanwhile, heat some oil in a separate pan.

Sauté the onions, which have been sliced into thin, long strips.

Remove the fried onions and set them aside.

Once the biryani is well-mixed, garnish it with the fried onions and dry fruits.

If you wish, you can also add a spicy red tomato and garlic chutney as a garnish.

To make the chutney, combine tomatoes, garlic, green chilies, red chilies, and salt (to taste) in a blender jar.

Blend the mixture without adding water, then stir in some lemon juice at the end. Your chutney is ready.
