Ingredients for Aloo Kulcha:
All-purpose flour (Maida) - 2 cups
Yogurt (Curd) - 3 tbsp
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp
Sugar - 1 tsp
Oil/Ghee - 2 tbsp
Salt - to taste
Boiled and mashed potatoes - 3-4
Finely chopped onion - 1
Green chilies - 2
Grated ginger - 1 tsp
Fresh coriander leaves - finely chopped
Red chili powder - 1/2 tsp
Garam masala - 1/2 tsp
Dry mango powder (Amchur) or dried pomegranate seeds (Anardana) - 1 tsp
Dried fenugreek leaves (Kasuri Methi) - 1 tbsp
Salt - to taste
Nigella seeds (Kalonji) - 1 tsp
Butter - as required

Method for making Aloo Kulcha:

First, sift the all-purpose flour into a mixing bowl. Add salt, sugar, baking powder, baking soda, yogurt, and two tablespoons of oil, and mix everything well. Knead a soft dough using this mixture and lukewarm water; lightly coat the top with oil, cover, and let it rest for an hour.

Next, take boiled and mashed potatoes in a bowl. Mix in finely chopped onion, green chili, ginger, fresh coriander, red chili powder, dry mango powder (amchur), garam masala, dried fenugreek leaves (kasuri methi), and salt; then, shape the mixture into small balls for the stuffing.

Afterward, take a portion of the rested dough and flatten it slightly with your hands. Place a potato stuffing ball in the center and seal it by gathering the edges together.

Dust the dough ball with a little dry flour (maida) and gently roll it out into an oval or round shape using a rolling pin. Sprinkle some fresh coriander and nigella seeds (kalonji) on the top surface of the rolled-out kulcha and press lightly with the rolling pin so they adhere.

Flip the kulcha over and apply water to the other side; then, place it on a hot tawa (griddle) with the water-coated side facing down.

When small bubbles begin to appear on the kulcha, hold the tawa by its handle, flip it over, and cook the kulcha directly over the flame.

Remove the cooked kulcha from the tawa, brush it with butter, and serve it with chhole (spicy chickpea curry) and chopped onions.
