Cut the potatoes into long, thin strips.
Before proceeding to remove the starch and moisture, peel the potatoes and cut them lengthwise. Ensure the potato strips aren't too thick; they should be long and very thin.

Remove the starch
After washing the cut potatoes thoroughly, soak them in water for at least 20 minutes. If you have more time, let them soak for an hour. This helps remove excess starch from the potatoes.

Dry them properly
After an hour, remove the potato strips and place them on a plate. Then, spread them out on a clean cotton cloth or towel for 10–20 minutes. This step effectively removes all moisture from the potatoes.

Coat with cornstarch
To ensure crispiness, mix cornstarch, salt, and black pepper with a little water. Coat the dried potato strips thoroughly with this mixture. This coating helps achieve a crispy texture without the need for deep-frying.
