Meanwhile, gather fresh vegetables—such as cabbage, carrots, capsicum, green chilies, beans, onions, and any other vegetables you prefer—to make the veg Darjeeling momos. Finely chop all the vegetables. Then, mix in salt to taste, a pinch of Ajinomoto, chaat masala, and other seasonings, blending everything thoroughly.
**Preparing the Momos Filling**
She notes that while the vegetables *can* be sautéed in oil, the vegetables for Darjeeling-style momos are traditionally not pre-cooked; they cook solely through steaming. Ritika adds that for soya momos, you should soak soybeans in water and then grind them finely in a mixer. Season the mixture with salt and spices to taste. This prepares the filling for both the vegetable and soya versions of Darjeeling-style momos.
Next, roll out the dough thinly and fill it with the vegetable or soya mixture. You can shape the momos however you like. Finally, place them in an idli maker or another suitable vessel to steam. She suggests starting by soaking 10 to 12 whole dried red chilies in lukewarm water for 20 to 30 minutes. Next, transfer the soaked chilies to a blender. Add about 5 to 6 garlic cloves, a small piece of ginger, 2 tomatoes, 1 tablespoon of vinegar, salt to taste, half a teaspoon of sugar, and a little of the soaking water, then blend everything into a smooth paste.
Now, heat a tablespoon of oil in a pan and cook the prepared paste over a low flame for 5 to 7 minutes. Once the chutney thickens slightly, stir in some crushed sesame seeds and a pinch of black pepper. Turn off the heat and let the chutney cool down completely. This spicy, tangy, and mildly sweet chutney pairs perfectly with veg, soya, or chicken momos, offering an authentic Darjeeling-style taste.
