**The Magic of Ice Cubes**
This hack works like magic, though it is actually based on simple science: the cold temperature of the ice causes the oil to solidify. If there is excess oil in the dish, place two or three ice cubes on a ladle and gently swirl the bottom of the ladle over the surface of the gravy. The hot oil will solidify upon contact with the cold ladle and stick to its underside. You can then scrape off the solidified oil and discard it.
